Are you biased toward Odoo?

Can you migrate us across?

What does SAP B1's add-on ecosystem mean if we ever leave?

Most SAP B1 sites run partner add-ons for whatever the core does not cover, and each one keeps its data in its own tables under a proprietary licence. At migration time that data has to be reconstructed rather than exported, which is usually the largest single line in the quote. In Odoo the equivalent logic lives in modules on one PostgreSQL database you can dump at any time. That said, if your add-ons are stable, paid for and doing their job, this lock-in is a switching cost to weigh — not a reason to move on its own.
