Menu margins priced on last year's ingredients

Recipes were costed once, in a spreadsheet, and ingredient prices have moved every week since. In Odoo each dish is a bill of materials: every goods receipt updates the ingredient's average cost, so the margin on each menu line reflects what you actually paid last, not what you paid when the menu launched.

A daily close that gets re-keyed every morning

Someone prints the Z-report from each till and types the totals into the accounting system the next day — sales, service charge, VAT, cash and card splits, line by line. Odoo POS closes the session and posts that journal entry itself, so the day's revenue is in the ledger before the next service opens.

Central kitchen transfers on paper requisitions

The commissary sends stock to outlets against paper requisitions, wastage is recorded nowhere, and the month-end count at each outlet never matches the kitchen ledger. Odoo treats each outlet as its own stock location: transfers are documents, wastage is a scrap entry with a reason, and the gap between theoretical and actual food cost finally becomes a number you can chase.

Which costing method should a restaurant use in Odoo?

Average cost (AVCO) on ingredients, almost always. Produce and seafood prices move week to week, and AVCO re-averages on every goods receipt without the lot-level bookkeeping FIFO demands. Your recipes are BOMs built on those ingredients, so plate cost moves automatically when purchase prices do.

We already run a hotel PMS and an OTA channel manager. Does Odoo replace them?

Usually not, and we say so upfront. A dedicated PMS handles rates, availability and OTA channels better than Odoo does out of the box. The setup that works is keeping the PMS for rooms and posting its daily revenue and city-ledger balances into Odoo accounting, so finance stops re-keying night audit reports. That interface goes into the fixed written scope, not in as an afterthought.

Can Odoo POS handle table service — split bills, service charge, kitchen printing?

Yes. Restaurant mode adds floor plans, order printing to the kitchen, bill splitting by item or by guest, and a tip or service-charge line. It also keeps taking orders when the internet drops and syncs the session once the connection returns — which matters more in a full dining room than any feature list.
