Our products are engineered to order, not just configured — can a configurator cope?

Part of your catalogue is probably rule-based even if it does not feel that way, and that part belongs in the configurator. Genuinely bespoke work still needs an engineer, and we set that path up too: the quote carries the engineered lines, and the engineering step becomes a visible stage in the system instead of an email thread. Scoping starts by sorting your products honestly into those two groups.

How long before sales can quote without waiting on engineering?

For the pilot family, within the first phase — that is the point of starting with one family. The honest variable is how consistent your existing quoting rules turn out to be once written down; we give the real timeline after reading your quote archive and price files, not before.

Does the configured quote really drive production, or do we re-enter it?

It drives production directly. One BOM per product carries lines flagged per variant, so the manufacturing order Odoo creates on confirmation contains exactly the components and operations the chosen options require. The spec is entered once, by the salesperson picking options, and never typed again.

Do we need Odoo Enterprise for this?

Much of it does not: product variants, quotation templates, pricelists, line margins and manufacturing are in the Community edition, whose licence is $0. Some pieces — electronic signature through the Sign app, PLM for engineering change control — are Enterprise, which Odoo bills you directly and we never mark up.
